Raw Sour Cream

1/2 cup raw cashews (soaked for at least 2 hours)
2 young coconuts (flesh from--about 1-1/2 cups)
1/4 cup fresh squeezed lemon juice
1 teaspoon celtic sea salt or vegesal

Combine all ingredients in blender until smooth. Can add water to thin out if needed.
